
"Dinner's On Me" is doing a Cookie Exchange, and I got to thinking about the kinds of cookies that I actually make from scratch. I just made chocolate chip cookies last night and they turned out terribly, as usual. So, when considering what cookie recipe I could contribute to this Cookie Exchange, I really only have a couple of options. Lucky for me, one of the cookies that I can actually make well is Spritz Cookies. I only make these during the holidays, but they are so buttery and absolutely delicious, I'm thinking about making some right now.
Spritz Cookies
1 1/2 cups margarine or butter
3 1/2 cups flour
1 cup sugar
1 egg
1 tsp. baking powder
1 tsp vanilla
1/2 tsp almond extract
Food Coloring
Decorations - colored sugar, sprinkles, red hot candies, etc.
Beat margarine with mixer for 30 seconds. Add 1 cup flour, the sugar, egg, baking powder, vanilla, and almond extract. Beat till thoroughly combined. Beat in remaining flour. Divide dough for as many colors as you wish; add food coloring as desired.
Force unchilled dough through a cookie press onto an ungreased cookie sheet. Decorate with colored sugar, sprinkles, or candies. Bake at 375 degrees for 8-10 minutes or till edges are firm but not brown. Cool cookies on a wire rack. Makes about 84.
(No cookie press? Well, you should get one. But, if not, you can drop the dough by teaspoon onto the cookie sheet.)

Those are my favorite! You make all kinds of good desserts though...pies, truffles, and that banana dessert! Oh and I love the dinners you make too, chicken pillows and "toilet seats." How did you learn to cook and I can't cook anything?
Thanks for the idea Steph! My 4th grader has been home with pneumonia for 2 weeks and it gave us a perfect thing to do yesterday. I had a cookie press and never used it. We had so much fun we'll probably do it every year now!

First of all, ummm, Jeff's comment about "toilet seats"? You might have to explain that one.
These look so great! Can you use these with cookie cutters? I don't have a cookie press, and to be honest...I don't even know what a cookie press is. Sad, huh?

"Toilet Seats"
Loaf of French bread
1 lb. ground beef
2 cans of tomato soup
Cut the top off of the bread loaf and hollow out the inside, breaking up the bread pieces. Brown the meat and drain. Add the soup and bread pieces to the meat - stir and warm up a bit. Spoon the meat mixture into the hollow loaf, put the top back on, wrap in foil, and bake at 350 for 15-20 mins. Serves 4-6
I've tried adding onion, cheese, Italian spices, and even corn, but Leon won't allow any altering of the original recipe. We've also tried to come up with a different name, but "Toilet Seats" has just stuck. If you are turned off by the name, I'd suggest coming up with a new name before you make it for the first time. :)
LOL about toilet seats!! Something a house full of boys would totally understand - perhaps it could entice my #3 to eat his dinner...
I have a cookie press, but I've not had very good results with it. Can you do a tutorial on using it?
I got as kick out of the "toilet seat" remarks. I have been trying for years to come up with a better name but I fear that Bruce and Leon will call them toilet seats no matter what! It is delicious no matter what it is called...MOMm
